Recipe Ingredients
FISH: You can use fresh or frozen cod fillets, or any other white fish. Frozen fillets can be added straight to the soup!
SOUP BASE: A budget-friendly combination of canned diced tomatoes, celery, onion, garlic, Italian seasoning, salt and pepper is all you need to make this healthy soup recipe!
How To Make Tomato Cod Soup
This soup can be prepped and cooked in just 20 minutes!
- Chop up the onion, mince the garlic, and cook for 1-2 minutes in a large pot.
- Add in diced tomatoes, celery, water, and spices according to the full recipe instructions below.
- Add the cod fillets to the soup pot. Cook until fish is translucent.
- Scoop into bowls. Serve and enjoy!
Leftover soup can be stored in an airtight container in the fridge for up to a week, or frozen for up to 6 months. To thaw, defrost the soup in the fridge overnight, then reheat in a pot or microwave.
